Pardon my ignorance with inverters, but when on generator/shore power, would AC outlets that utilize power from the inverter switch over, or still be on inverter power? If they don't switch supply, then it would kinda make sense.

So the problem is not "not enough inverter power"; the problem is "no place to plug in the coffee maker"?
That's just an invitation to do a "mod". If you don't feel confident with doing AC wiring, make friends with someone who is (and is competent).
