Sadly with RV sales going gangbusters you'll be hard pressed to find a sparsley populated campground; especially in the LP.
From what I've been seeing state parks in the middle of the state seem to fill up a lot less than ones on the coasts. In addition, parks "out in the middle of nowhere" (e.g. no attractions nearby) also seem to have fewer campers.
If you can manage try camping during the week instead of weekend far fewer people will be camping. You also may have better luck if you look after Labor Day as schools should be "in sessions" (remotely or not the kids will still have class).
If you really want to look off the beaten path look for state forest campgrounds and national forest campgrounds (you'll have no hook ups but no neighbors either).
Another option is private campgrounds....
