I've heard of ice crystals building up on the rear wall of the freezer before. I was told to take a thin plastic sheet, like those cheap plastic cutting boards and place it against the back wall of the freezer. Then when you see any ice crystals form on this sheet, just take it out and rinse and dry it, replace.
