My 2014 Thor Hurricane you have to light the pilot light to use the oven.. as for the hot water heater, just flip the switch on the panel, it does it without human help..

Furnaces and water heaters do not generally have pilot lights. They obviously would never stay on while the RV was underway or during extremely windy conditions if they did.
