Tire inflation
Tire specs in cab say 245/70 R19.5 MAX psi 85 lbs
Kelly armor steel RSA, "G" load range, same size MAX psi 110 lbs
(Both single and dual wheels is same)
Loaded with fuel and ready for trip, what should I inflate to ????
Split the diff? say 100 psi

You should check if the recommended pressures are in the inside of the drivers door.

The only correct answer is what your Mfg says in the Yellow sticker for coach (RV) they made for the chassis.
You can get a lot of gnats arse red tape about your actual weight and the distribution about where on the axis, but my yellow sticker says 82 and I ride on 82 24/7 1 passenger or 8 passengers.
The Max tire rating is for the tire and not necessarily related to your specific coach. You should never exceed 110 psi for that tire, but I am sure the yellow sticker is well below the rated maximum capacity of the tire.

What's wrong with the sticker in the cab? That pressure for that size tire is what is required for the RV at GVWR. The sidewall pressure is the maximum for that tire - you are normally NOT required to be at maximum pressure to carry the load of your MH.

Let me open a can-o-worms. Tire inflation specifically says COLD inflated pressure. How dependent on ambient temperature is "cold inflated pressure"? My tires spec 80psi.. but at what temperature? If it's 40 degrees ambient temperature, my "80psi" may become 85 (or more) cold tire temperature when the ambient temperature rises significantly.

You check when the tires are cold regardless of ambient temperature.

Very. A rule of thumb for ideal cold ambient temperature to check cold inflated pressure is 68F or 20 C
Add 1 degree F for every 10 degrees up / down ambient air temperature.
If it is 40 degrees outside your 80 psi may be 76 or 77F. If you don't believe go to Discount tire in Dallas one day when temp has dropped 30 degrees. The line to have air checked and added for free extends all the way downtown. If those people would just go to work; by noon the air pressure is mysteriously all right again.
Air pressure (TPMS high tech computers) are the Text Toys for old men that don't like Texting on Cell phone
Besides if your RV is properly waxed, no one will ever notice or ask how much air pressure in your tires unless you on a flat.

"Cold" means before being driven such as 1st thing in the morning, it's not a specific temperature.
As for inflation either the manufacturers recommendation or if the originals have been upgraded use the sidewall pressures.

Wut?
If your OEM tires had a sidewall maximum pressure of 95 psi but the RV manufacturer said all you need to run is 85 psi;
Then you upgraded to tires with a maximum sidewall pressure of 110 psi and you think that is what needs to be run in it now?
How about using an inflation chart for the new tires and see what pressure now corresponds to your GVWR?

Weigh and check the tire chart if you want to be as accurate or close as possible setting psig
My sticker states 110 psig for all axles
I run 110 in the steering axle but only need 100 psig in the drive and tag per weight and chart
Cold sidewall inflation psig is 120
