This is all very good advice but don't forget the most important thing:
You are doing this for enjoyment so pick your options accordingly. If not having a reservation makes you worry about finding a spot then make a reservation (they can always be changed). If you are more of a footloose and fancy free type of person then wing it. As long as you are having fun. If what you are doing is starting to feel more like work than leisure change your tactic.
