We borrowed Pete"s idea for our 2 ebikes, with minor mods. Got a heavy duty cargo carrier from Harbor Freight (750# rating IIRC). Added the brackets so that they cradle both the front and rear tires. (Our bikes are not fat tire, just cruisers.)
DH crafted a bracket to keep the bikes from leaning and knocking each other. Then we strap them on and together.
We've been very happy with the set up. It is also very easy to move to our Durango if we just want to go for a local day ride.
I don't know if you could get 3 bikes on. That might be pushing it unless the cargo carrier was "deep" enough to accommodate a 3rd set of brackets.
