Welcome to the forum, Paul_Leslie. We're minimalists, too, and I think we could live in our 24.1 We also met another couple here in Texas who were planning to trade in their large diesel pusher and continue to full time in a 24.1. The motor home is pretty well laid out!
As far as the paper towel holder, we have ours over the sink but to the side, to the left of the sink and parallel to the steps. You can stand on the steps and reach them. That way it doesn't block the window. Hope that makes sense!
