Could the condensation be caused by the bread bag being a bit warmer than the air-conditioned motorhome?
Try letting the rig run a little bit warmer on the inside...

Put the bread inside your oven and close the door
We do this after being told about it and it seams to work well
How may people use the oven as an oven inside your rig anyway so it's using space you don't normally use for storage

Or the microwave: We use the microwave as our coach doesn't have an oven.

Then I have to find a place for the stuff that normally travels in the oven...

Try the refrigerator... unless mold on those items is a problem also...

If you do this and have the Microwave over the stove, don't use the stove or the undermicro light. It will cause the bread to dry out and get hard on the bottom from the heat.
