My folks flat-towed a 1987 Samurai for years. The odometer on that little 4x4 read over 120,000 miles...
But they figure that the "driven" miles were only about a quarter of that.

Agree on digital Speedo not counting miles but you must remember to count those toad miles to remind you of rotating and balancing the tires. No need to capture the toad miles for oil change, just tred the odometer.

Probably drains the battery as well since you have to leave the key in the accessory position. You could probably put a battery disconnect switch on it and solve both those problems.

Exactly, if the drive is in neutral how does it register? In my case the F150 has the transfer case in neutral so how could anything add up miles?

Apparently the sensor is on the rear drive train and the electronics stay on towing

On my F150 I when I shut off the button after a door is opened everything powers down

I've documented all our "toad" miles by taking a picture of the mh odometer when we hook up and when we disconnect.
A little over 10k on the Jeep Cherokee, 7k on our CMax, 8k on a dolly/CooperS.
I enter those miles on a spreadsheet for maintenance.

FYI Discount Tire has always rotated the tires when I tell them "we tow behind our mh".

Electronic odometers mostly won't accrue mileage, but mechanical odometers likely will. It's been a long time, but when I worked part time in a service station the lube service involved unscrewing the speedometer cable at the transmission and lubricating it. I think such a disconnection should stop the mileage pile-on with units of that type. Better find a way to seal off dirt when towing while disconnected.
