How much water you can get in is dependent on how level the tank is and what direction, the position of the overfill port on the tank, the routing of the overfill drain hose or pipe, the temperature of the tank (it's plastic!), etc.

And those P3 meters have a stated accuracy of +/- 1/10 th of a gallon! This is 10% so the meter could read 50 gallons and you have 45 gallons or 55 gallons.

The manufacturer's of the plastic tanks have a +/- also on what the tank can hold, notice that most say NOMINAL which means it will vary.

They are stated "Accurately Measures To 1/10th Of A Gallon" which means they have a digital resolution to 1/10th of a gallon. There is no stated meter accuracy so what you say may or may not be true. Since they operate by the "paddle wheel" method they are probably less accurate at low flow rates and more accurate at higher flow rates, but the reading is never scientifically accurate.

Similar to the coach tank sensors that are +/- 10 - 50 gallons.

If that tank is 2 gallons off, I'd park it until I got it fixed..that's dangerous. Slides not working, jacks dropping...keep running, but water tank off 2 gallons...park it...serious stuff.

Take it to a dealer and let it sit for a couple of months. That’ll fix it.

After fresh water tank is filled turn on your water heater to get the extra 6 gallons in that tank. then you can add more water.
